そば, and what is in the dashi
Two food warnings are worth carrying in Japan. Buckwheat allergy is taken seriously here because そば is everywhere and reactions can be severe — restaurants will tell you plainly whether そば粉 is in something, including in places you would not expect it. The other is 出汁, the stock underneath a great deal of Japanese cooking, which is usually made with 鰹節, dried bonito. That makes many apparently vegetable dishes not vegetarian, and it is worth asking rather than assuming.
