Vegetarian is a recent idea here
France came to vegetarianism late, and the vocabulary is ahead of the practice. Say you are végétarien and you may still be offered fish, or a salad built on lardons, because the category is often heard as avoiding red meat rather than all of it. Traditional cooking assumes meat or stock in places that are not obvious: soups, gratins, the green beans. Cities have changed fast, and Paris and Lyon now have plenty of options, but in a small-town restaurant the safer move is to ask what a dish contains rather than to name a category.
