Jamón hides in everything
Spain does not entirely think of jamón as meat. A sandwich described as plain may arrive with it, a vegetable dish may have been cooked with a ham bone, and a waiter told you do not eat meat may quite reasonably not count it. Say what you cannot eat rather than naming a category, and ask whether a dish lleva jamón. Gluten, by contrast, is handled unusually well: sin gluten labeling is widespread and the celiac association's certification is recognized everywhere, so kitchens can often tell you exactly what is in a dish.
