Hairy crab, and eating as a set of rules
大闸蟹 — the Chinese mitten crab — is the delicacy of the Yangtze delta autumn, and the fuss around it is not invented for tourists. The crabs are freshwater, caught as they migrate, and the most prized come from Yangcheng Lake 阳澄湖 near Suzhou, to the point that fake Yangcheng-lake crab is a genuine commercial problem and real ones are sold with numbered rings. Season runs roughly from September to November, with the saying 九雌十雄 — ninth month for the female, tenth for the male — meaning the female's roe is at its best in September and the male's creamy fat in October. The eating is deliberately slow, and that is the point rather than an obstacle. A crab arrives steamed whole, plain, with a dish of dark vinegar and shredded ginger. You take it apart in order: open the shell, eat the 蟹黄 first with a small spoon, then the body meat, then the legs and claws, cracking each with a tool. A formal set of eight tools exists, 蟹八件, and a restaurant will bring some version of it. Ginger and vinegar are not only for flavour: crab is considered 寒, cooling, in Chinese food thinking, so warm ginger, warm yellow wine and a warm room are the standard counterweights, and people will tell you not to drink cold things with it. What the meal is really for is the conversation. A crab dinner takes two hours because the eating is fiddly and nobody is in a hurry; the table talks while it works. This is the same institution the Spanish course called the sobremesa, and it behaves the same way — leaving early reads as a wish to be elsewhere, and the correct move is Alex's 慢慢来, take our time. Two practical warnings. First, crab is one of the commonest food allergies, and if you are sensitive to shellfish this is not the dish to be polite about — 我对海鲜过敏 is the sentence, and it is understood immediately. Second, price varies enormously by size, sex and provenance, and a restaurant quoting a low figure is selling you a small one; buying live crabs from a market and steaming them for fifteen minutes at home is both cheaper and, most delta residents would say, better. And the grammar is not a coincidence. This lesson's separable verbs are the ones a dinner table runs on: 帮忙, 聊天, 结账, 见面, 散步 afterwards. You have known all of them since year 1. What changes tonight is that you can now put things inside them.
